- Mix garlic, lemon rind and juice, oil, mint, parsley and yogurt in a bowl. Adjust seasoning with salt and pepper.
- Add the lamb and marinate for about 20 - 30 minutes.
- Thread the lamb on to the skewers with pieces of onion and green pepper.
- Cook under a preheated grill for about 10 minutes or until cooked its through.
