Preparation Method :
- Cut tempeh into pieces and put aside.
- Pound garlic, shallots and pepper together well. Add light soy sauce, sugar, tamarind juice and salt.
- Stir until completely dissolved. Transfer to a mixing bowl and toss with tempeh slices.
- Marinate at a room temperature for 10 - 15 minutes.
- Place a work of oil over medium -low heat until the oil is hot.
- Fry marinated tempeh until golden brown. Remove and drain.
- Continue frying until all the tempeh is used up.
- Arrange on a serving dish and sprinkle crisp-fried shallot over the top.
- Garnish with lettuce leaves and carrot slices.
- Serve at once.

- 20 clove Thai garlics, peeled and sliced
- 6 shallots, sliced
- 1 teaspoon black pepper
- 2 tablespoons light soy sauce
- 4 teaspoons brown sugar

- 1 teaspoon sea salt
- 500 ml Cooking oil
- 100 grams crisp-fried shallot
- Lettuce leaves and carrot slices for garnish
