FRIED MUSHROOMS AND TOFU WITH SAVORY SAUCE

Preparation Method :
- To prepare savory sauce: combine all ingredients together, stir well and put aside.
- Wash dried shiitake mushrooms and soak until tender. Remove and wash in a solution of tapioca flour and water until is completely clean.
- Wash again and squeeze to dry. Cut into small pieces and put aside.
- Steam oyster mushrooms over medium heat until done and tender. Remove and leave to cool
- Bring a pot of water to the boil over high heat (add a dash of salt into water).
- Add in tofu and boil until done and floated to the surface. Remove and cut into small cubes.
- Finely pound peppercorns, garlic and coriander roots and put aside.
- In a mixing bowl, combine all mushrooms and tofu together. Add pounded pepper mixture, light soy sauce, sugar and salt. Toss and leave to marinate at a room temperature for 15 minutes.
- Place a pan with oil over medium heat until the oil is hot. Fry marinated mushrooms until crispy on the outside but is still tender on the inside. Remove and drain.
- To serve: ladle fried mushrooms onto iceberg lettuce and place on a serving dish.
- Sprinkle crisp-fried shallot over the top.
- Serve with the savory sauce.

- 8 dried shiitake mushrooms
- 500 grams oyster mushrooms, discard stems and torn into strips
- 250 grams semi-hard tofu
- 1 teaspoon black peppercorns
- 15 cloves Thai garlic, peeled
- 5 coriander roots, sliced
- 12 straw mushrooms cut into small pieces
- 3 tablespoons light soy sauce
- 1 teaspoon unbleached sugar
- 1 teaspoon sea salt
- 750 ml Cooking oil
- 100 grams crisp-fried sliced shallot
- Fresh vegetable: ice berg lettuce
Savory sauce
- 5 tablespoons palm sugar syrup
- 6 teaspoons light soy sauce
- 2 tablespoon roasted shallot, pound finely
- 2 tablespoon roasted garlic, pound finely
- 100 ml lime juice
