WAX GOURD SOUP WITH PICKLED LIME

Preparation Method :
- Clean wax gourd, peel and cut into halves. Discard seeds and membrane, cut into large pieces and put aside.
- In a soup pot, combine water or stock with water reserved from soaked shiitake mushrooms.
- Place the pot over medium heat and add in wax gourd, fried shiitake mushrooms, garlic, coriander roots and peppercorn.
- Cook until boiling. Season with light soy sauce, seasoning sauce and sugar.
- Continue cooking until the wax gourd is cooked through and the soup is should be sour and salty.
- Ladle into a serving bowl, sprinkle pepper over and garnish with sliced spring onion and coriander.
- Serve hot.

- 2 kg wax gourd
- 3 liters water or vegetable stock
- 500 ml water reserved from soaked shiitake mushrooms
- 8 dried shiitake mushrooms (about 2" in diameter), soaked until tender and fried
- 2 tablespoons Thai garlic, lightly crushed
- 5 coriander roots
- 1 teaspoon black peppercorn, cracked
- 4 tablespoons light soy sauce
- 2 tablespoons seasoning sauce
- 4 teaspoons brown sugar
- 5 tablespoons liquid reserved from pickled lime
- 2 pickled lime
- 2 spring onions, sliced
- 2 corianders, sliced pepper
