THAI PUMPKIN AND COCONUT SOUP

Preparation Time :
30 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Peel and dice the pumpkin. Soak the dried shrimp in hot water for 10 minutes.
  • Place the drained shrimp with the shallots and lemon grass in a blender or food processor and puree with a little water.
  • Combine puree with coconut milk and water and bring to the boil, stirring constantly.
  • Simmer for 5 minutes. Add the pumpkin and simmer until tender. Stir in the remaining coconut milk and bring back to the boil.
  • Add the fish sauce and lime juice to taste. Stir in the basil leaves just before taking off from heat.

INGREDIENTS

  • 750 grams ripe pumpkin
  • 100 grams dried shrimp
  • 3 shallots or 1 small onion, chopped
  • 2 stems lemon grass, tender white part only, finely chopped
  • 250 ml canned coconut milk
  • 1 tablespoon fish sauce
  • Lime juice to taste
  • 250 ml Chicken Stock 
  • Few fresh basil leaves
