Preparation Method :
- Crush the shallots, coriander root, lemongrass, shrimp paste and peppercorns together until thoroughly blended.
- Add the mixture to boiling water and stir then add the fish and young ginger.
- Season with tamarind juice, fish sauce and palm sugar, according to taste then add the scallions and coriander leaves. Stir together gently and place in a bowl. Serve immediately.

- 2 Milkfish cut into 2 inch slices
- 50 grams Young ginger, sliced
- 2 pieces Shallots, coarsely chopped
- 2 roots Coriander root, coarsely chopped
- 1 stem Lemongrass, slivered
- ½ teaspoon Shrimp paste
- 15 whole peppercorns
- 6 tablespoon Tamarind juice
- 4 tablespoon Fish sauce
- 50 grams Palm sugar
- 600 ml Water
- 2 stems Scallions cut into pieces
- 1 stem Coriander leaves
