Preparation Method :
- To prepare the soup: bring a pot of water to the boil over moderate heat.
- Add in Chinese radish, coriander roots, and peppercorns. When the soup boils, reduce the heat to low and simmer for 30 minutes.
- Add onion, apple and raisin, continue cooking for 10 minutes. Remove from the heat.
- Strain the stock into a new pot. Place the stock pot over medium heat and bring to the boil.
- Add savory shiitake mushrooms and cook until tender.
- When it returns to boiling, season with light soy sauce, seasoning sauce and salt. Stir to mix well, turn off the heat.
- Bring a pot of water to the boil over high heat, add rice noodle rolls and boil until done.
- Remove and put aside. In a new pot, pour in water and bring to the boil over medium heat.
- Add in cooked rice noodle rolls and cook until boiling. Mix rice flour with water and stir noodle pot.
- Stir continuously until thickened and done. Turn off the heat.
- Spoon one portion of cooked rice noodle rolls into a serving bowl, arrange vegetarian pig liver, salty TVP, fried tofu and crisp-fried bean curd skin on top.
- Add generous amount of clear soup over and scatter spring onion and coriander over the top.
- Garnish with coriander leaves.
- Serve immediately with chili in vinegar.

- 750 ml water
- 1 head Chinese radish, cut into pieces
- 4 coriander roots, bruised
- 1 teaspoon black peppercorns, cracked
- 1 onions cut into wedges
- 1 red apple, peeled and cut into pieces
- 3 tablespoons golden raisin
- 8 savory shiitake mushrooms
- 3 tablespoons light soy sauce
- 1 tablespoon seasoning sauce
- 1 teaspoon seasoning sauce
- 350 grams rice noodle rolls
- 250 ml water
- 1 tablespoon rice flour
- 3 tablespoons water
- 18 pieces seasoned vegetarian pig liver
- 250 grams salty textured vegetable protein
- 2 piece hard white tofu, thinly sliced and fried
- 8 pieces crisp-fried dried bean curd skin
- 75 grams sliced spring onion'
- 75 grams sliced coriander
- Coriander leaves for garnish minced yellow spur chili in vinegar
