Preparation Method :
- Bring a pot of water over high heat.
- Add in tofu and boil until done and floated to the surface. Remove and put aside.
- Cut boiled tofu into pieces and put into a mixing bowl.
- Marinate with light soy sauce, seasoning sauce, sugar and black pepper.
- Toss to coat, pan -fry in hot oil until golden on all sides.
- In a pot, add in palm sugar and place over low heat. When it melts and starts caramelized, pour in water.
- Add cinnamon, star anise, five Chinese spices, coriander roots, garlic and peppercorn.
- When it boils, season with light soy sauce, seasoning sauce and salt.
- Add fried tofu and simmer until the tofu absorbs the sauce and is tender. Turn off the heat.
- Ladle into a serving dish and garnish with Chinese celery sprig.
- Serve hot.

- 500 grams hard white tofu
- 200 grams palm sugar
- 500 ml water
- 2 stick (1") cinnamon, roasted
- 2 star anise, roasted
- 1 teaspoon five Chinese spices powder
- 5 coriander roots, bruised
- 10 cloves small Thai garlic, crushed
- 1 teaspoon peppercorn, cracked
- 2 tablespoons light soy sauce
- 2 tablespoons seasoning sauce
- 1 teaspoon sea salt
- Chinese celery spring for garnish

- 2 teaspoons light soy sauce
- 2 teaspoons seasoning sauce
- 1 teaspoon sugar
- 1 teaspoon ground black pepper
