THAI HOT-COLD SALAD

- Peel the orange, removing the pith and white membrane, and cut into thin slices. Line 2 plates with lettuce, arrange the orange slices on top and chill.
- Heat the oil in a frying pan (skillet) and fry the garlic until golden.
- Add the pork and stir until brown and cooked through - about 5 minutes.
- Add the peanuts, sugar, soy sauce, water, salt and cayenne to the pan and mix well.
- Pour the hot pork mixture over the oranges and garnish with coriander.
- Serve immediately.
INGREDIENTS
- 2 large navel oranges
- 4 crisp lettuce leaves
- 2 tablespoon Cooking oil
- 2 clove garlic, crushed
- 700 gram cooked cold pork minced
- 2 tablespoon finely chopped peanuts
- 2 teaspoon sugar
- 2 tablespoon soy sauce
- 2 tablespoon water
- Salt
- Pinch of cayenne pepper
- Coriander sprigs to garnish
