SPICY SHRIMP WITH FRIED EGG SALAD

Preparation Method :
- Fry the eggs in hot oil (set heat to medium) until golden yellow. Remove and drain oil then cut into bite-sized pieces.
- Mix the lemon, fish sauce, brown sugar and bird chili together.
- Add the scalded shrimp and mix together. Follow with the tomatoes and onion slices. Blend the contents together gently.
- Add the fried eggs, carrots, celery and scallions. Mix together gently and place on a serving dish. Serve immediately.
INGREDIENTS
- 3 Chicken eggs
- 50 grams Minced shrimp, scalded
- 1 Tomato, sliced
- ½ bulb Large onion, vertically sliced
- 50 grams Carrots, slivered
- 1 -2 stems Celery, cut into pieces
- 1 -2 stems Scallions, cut into pieces
- 3 tablespoon Lemon juice
- 2 tablespoon Fish sauce
- 2-3 teaspoon Brown sugar
- 1 tablespoon Bird chili, finely chopped
- IDHAYAM Mantra Peanut oil for frying
