MIXED BEAN AND RATATOUILLE BAKE

Preparation Time :
20 minutes

Cooking Time :
40 minutes

Preparation Method :

  • Heat the oil in a large frying-pan. Add the vegetables in batches, fry for about 5 - 10 minutes or until the vegetables begin to soften.
  • Adjust seasoning with salt and pepper and then transfer to an ovenproof dish.
  • Mix together the cheese, almonds with parsley and sprinkle over the vegetable mixture.
  • Preheat the oven to 180°C / 350°F / Gas Mark 4. Bake for about 20 minutes or until golden.

INGREDIENTS

  • 450 grams of mixed pulses, drained and rinsed 
  • 150 grams fine beans, halved 
  • 1 teaspoon Cooking Oil
  • 75 grams courgette, chopped
  • 450 grams of chopped tomatoes 
  • 1 red pepper, de-seeded and chopped
  • 500 grams large aubergine, chopped
  • 1 onion, chopped
  • 1 green pepper, de-seeded and chopped
  • 3 garlic cloves, crushed 
  • 12 pitted black olives, halved 
  • 50 grams ground almonds
  • 1 tablespoon dried mixed herbs 
  • 50 grams mature Cheddar, grated finely 
  • 25 grams chopped fresh parsley
  • Salt and freshly ground black pepper, to taste
