Preparation Method :
- Measure the coconut into a milk pan and add the milk.
- Bring to the boil, remove from the heat, cover and leave to rest for about 10 - 12 minutes. Strain the milk.
- Spray a non-stick frying-pan with the cooking spray and stir-fry the vegetables. Stir in the soy sauce and curry paste.
- Stir the strained milk into the frying-pan for about 2 minutes and serve.

- 150 grams carrot, cut into matchsticks
- 90 grams green beans, topped and tailed
- 25 grams unsweetened desiccated coconut
- 90 ml skimmed milk
- ½ green pepper, de-seeded and cubed
- ½ red pepper, de-seeded and cubed
- 1 courgette, cut into matchsticks
- 2 tablespoons light soy sauce
- 1 tablespoon Thai red curry paste
- Low-fat cooking spray
