THAI FRY

Cooking Time :
20 minutes

Preparation Method :

  • Measure the coconut into a milk pan and add the milk.
  • Bring to the boil, remove from the heat, cover and leave to rest for about 10 - 12 minutes. Strain the milk.
  • Spray a non-stick frying-pan with the cooking spray and stir-fry the vegetables. Stir in the soy sauce and curry paste.
  • Stir the strained milk into the frying-pan for about 2 minutes and serve.

INGREDIENTS

  • 150 grams carrot, cut into matchsticks
  • 90 grams green beans, topped and tailed
  • 25 grams unsweetened desiccated coconut
  • 90 ml skimmed milk
  • ½ green pepper, de-seeded and cubed
  • ½ red pepper, de-seeded and cubed
  • 1 courgette, cut into matchsticks
  • 2 tablespoons light soy sauce
  • 1 tablespoon Thai red curry paste
  • Low-fat cooking spray
