THAI BEEF STIR-FRY

Preparation Method :

  • Rinse the rice under cold running water until the water runs clear. Combine the rice, coconut milk, water, and salt in a medium saucepan.
  • Bring to a boil over high heat. Decrease the heat to low, cover, and simmer until tender and the liquid is absorbed, 15 minutes.
  • Combine the fish sauce, soy sauce, and sugar in a small bowl. Heat the oil in a wok over high heat. Add the garlic and half the chillis. Stir-fry for 15 seconds.
  • Add the beef and stir-fry until browned, about 4 minutes. Pour in the soy mixture and stir-fry for 30 seconds. Add the remaining chillis and the basil and stir to combine. Serve hot over the coconut rice.

INGREDIENTS

  • 500 grams jasmine rice
  • 400 ml canned coconut milk
  • 1 teaspoon salt
  • 4 tablespoons Asian fish sauce
  • 4 tablespoons soy sauce
  • 2 teaspoon sugar
  • 2 tablespoon sesame oil
  • 5 cloves garlic, sliced
  • 5 long red chillis, seeded and sliced
  • 500 grams ground (minced) beef sirloin
  • 100 grams torn fresh basil leaves
