MUSHROOM & MANGE TOUT STIR-FRY

Preparation Time :
20 minutes

Cooking Time :
10 minutes

Preparation Method :

  • Soak the shiitake mushrooms in boiling water for 10 minutes or until soft, then drain and thinly slice.
  • Heat the oil in a wok and stir-fry garlic over a medium heat until it is lightly browned. Add all the rest of the ingredients in turn.
  • Stir-fry over a high heat for 2 - 3 minutes, then turn out on to a serving dish.
  • Serve immediately.

INGREDIENTS

  • 20 dried shiitake mushrooms
  • 3 tablespoons Cooking oil
  • 4 garlic cloves, finely chopped
  • 250 grams baby sweet corn, diagonally sliced
  • 300 grams drained canned bamboo shoots
  • 250 grams mange tout, topped and tailed
  • 50 grams fresh bean sprouts
  • 5 tablespoons light soy sauce
  • 4 tablespoons vegetable stock or water
  • Ground black pepper, to taste
