SPICY SEAFOOD MIX

Preparation Method :

  • Blanche the squid, fish, shrimp and mussels until cooked (each ingredient separately). Set aside to drain water.
  • Stir-fry the bird chili and garlic with oil until aromatic then add galangal, lemongrass and kaffir lime leaves. Gently stir-fry the contents together.
  • Add the mushrooms until cooked and then add the seafood. Gently stir-fry the contents together.
  • Season with fish sauce, oyster sauce, brown sugar, chili paste and lemon juice then add the sweet basil leaves and blend the contents together.
  • Place the contents on a serving dish and serve immediately.

INGREDIENTS

  • 200 grams Squid cut into bite-sized pieces 
  • 200 grams Red sea bass cut into bite-sized pieces 
  • 100 grams Medium sized shrimps, peeled and deveined 
  • 300 grams Mussels with shell 
  • 50 grams Young galangal, cut into grated 
  • 2 stems Lemongrass, thinly sliced 
  • 4 leaves Kaffir lime leaves, slivered 
  • 50 grams Straw mushrooms sliced into 4 pieces 
  • 50 grams Sweet basil leaves 
  • 2 tablespoon Red bird chili, coarsely sliced 
  • 1 tablespoon Garlic, finely chopped 
  • 1 tablespoon Fish Sauce 
  • 1 tablespoon Oyster sauce 
  • 2 teaspoon Brown sugar 
  • 2 tablespoon Chili paste 
  • 2 tablespoon Lemon juice 
  • 2-3 tablespoon IDHAYAM Sesame oil
