PARCHED PINEAPPLE CURRY

Preparation Method :

  • Stir-fry the chili curry paste with oil until aromatic.
  • Add the shrimp and squid then stir-fry together until cooked. Season with fish sauce and palm sugar then add cereal cream. Bring to the boil.
  • Add the pineapple and gently stir the contents together. Garnish with kaffir lime leaves and cayenne pepper. Scoop into a bowl and serve immediately.

 

INGREDIENTS

  • 400 grams Pineapple, cut into chunks  
  • 100 grams Medium-sized fresh shrimp, peeled and deveined
  • 150 grams Squid, sliced diagonally        
  • 400 grams Cereal cream        
  • 50 grams Roasted chili curry paste        
  • 2 tablespoon IDHAYAM Sesame oil       
  • 3 tablespoon Fish sauce        
  • 2 tablespoon Palm sugar        
  • 3 leaves Kaffir lime leaves, slivered    
  • 2 pieces Red cayenne pepper, diagonally sliced
