PORK WITH PRUNE AND APRICOT COUSCOUS

Preparation Method :
- Boil the vegetable stock in a pan, remove from heat and add the couscous. Cover and set it aside for 5 minutes or until tender. Remove any lumps.
- Heat half of the oil in a separate pan and fry the pork for 3 - 5 minutes on each side or until browned and cooked through.
- Heat the remaining oil in a frying-pan, add the onion and fry for about 2 minutes or until softened. Stir in the spices and cook for another 1 minute.
- Stir the couscous, prunes, apricots and coriander together with the onion and spice mixture. Serve with the pork.

- 500 ml vegetable stock
- 225 grams couscous
- 2 teaspoons Cooking oil
- 1 onion, chopped
- 1 teaspoon ground cumin
- 45 grams ready-to-eat dried prunes, chopped
- 1 teaspoon ground coriander
- ½ teaspoon chili powder
- 45 grams ready-to-eat dried apricots, chopped
- 25 grams chopped fresh coriander
