TANGY PASTA WITH MUSHROOM SAUCE

Preparation Method :

  • Heat the oil in a frying-pan and add the onion, garlic and mushrooms. Fry for about 2 minutes or until the onion is softened and the mushrooms are cooked.
  • Add the sun-dried tomato paste, chopped tomatoes and rosemary to the onion mixture, bring to the boil, cover and cook for 5 minutes.
  • Stir in the cheese and adjust seasoning with salt and pepper. Toss the cooked pasta with sauce and serve hot.

INGREDIENTS

  • 300 grams dried pasta shapes, cooked
  • 150 grams button mushrooms, quartered
  • 450 grams chopped tomatoes
  • 1 teaspoon Cooking Oil
  • 100 grams ricotta cheese 
  • 75 grams onion, chopped finely
  • 2 garlic cloves, crushed 
  • 50 grams sun-dried tomato paste
  • 1 teaspoon dried rosemary 
  • Salt and freshly ground black pepper, to taste
