PEPPERS STUFFED WITH PASTA AND VEGETABLES

Preparation Time :
20 minutes

Cooking Time :
35 minutes

Preparation Method :

  • Heat the oil in a frying-pan. Add the garlic, onion and courgette and fry for about 5 minutes or until softened.
  • Add the remaining ingredients to the frying-pan and stir through. Adjust seasoning with salt and pepper to taste.
  • Preheat the oven to 190°C / 375°F / Gas Mark 5. Place the peppers, cut side upwards on a baking sheet.
  • Spoon the courgette mixture into the pepper halves. Cook for 20 minutes or until the peppers are tender and the filling is golden. Serve hot.

INGREDIENTS

  • 150 grams red peppers, halved and de-seeded 
  • 50 grams small pasta shapes, cooked 
  • 1 teaspoon Cooking Oil
  • 1 tomato, chopped 
  • 1 garlic clove, crushed 
  • 1 onion, chopped 
  • 1 teaspoon dried oregano
  • 1 courgette, chopped
  • 25 grams pine nuts 
  • 50 grams feta cheese, crumbled
  • Salt and freshly ground black pepper, to taste
