LAMB WITH ORANGE AND REDCURRANT SAUCE

15 minutes

Preparation Method :

  • Marinate the lamb in garlic, orange rind and juice with rosemary in a bowl for about 20 - 30 minutes. Adjust seasoning with salt and pepper.
  • Heat the oil in a non-stick frying-pan, add the lamb to the pan. Reserve the marinade.
  • Fry the lamb for about 5 minutes or until browned on both sides. Pour over the reserved marinade, bring to the boil. Stir through the redcurrant jelly, heat for about few minutes and serve.

INGREDIENTS

  • 500 grams lamb neck fillet, cut into ½ -inch thick slices 
  • 75 grams redcurrant jelly 
  • 2 garlic cloves, crushed 
  • Grated rind and juice of lime 
  • 2 sprigs of fresh rosemary 
  • 2 teaspoons Cooking oil
  • 2 medium oranges 
  • Salt and freshly ground black pepper, to taste
