Preparation Method :
- Wash the prawns thoroughly, remove the shells and the fore portion of the body, but leave the tail fins attached.
- Heat the oil in a wok. When it is hot, put in the spice mixture and stir-fry until fragrant.
- Add the prawns, stir-fry for a short time, and then add the rice and continue stir-frying.
- When the prawn is nearly done, put in the yard-long bean.
- Season with the sugar and fish sauce, stir everything together, and then turn off the heat.
- Put the fried rice onto a plate and sprinkle with the fried dried shrimp and pork cracklings.
- Serve with sliced cucumber and spring shallots, and garnish with horapha sweet basil leaves.

- 4 tablespoons fried dried shrimp
- 2 tablespoons pork cracklings
- 4 tablespoons sliced yard-long bean

- 2 tablespoons sugar
- 4 tablespoons fish sauce
