LOTUS-SEED FRIED RICE

Cooking Time :
20 minutes

Preparation Method :

  • Rub the chicken,soy sauce and allow to marinate for about ten minutes.
  • Heat the oil in a wok. When hot, stir-fry the chicken, mushrooms, garlic, and lotus seeds. Then, add the rice and continue stir-frying.
  • Season with the pepper and soy and oyster sauces and continue stir-frying until everything is ready.
  • Place on the fried rice onto a bed of lettuce arranged on a plate.
  • Garnish with coriander leaves and thin slices of spur chilli, and serve.

INGREDIENTS

  • 750 grams cooked rice
  • 100 grams lotus seeds, soaked in water to soften, then boiled
  • 5 shiitake mushrooms, soaked in water to soften, then sliced
  • 100 grams bite-sized pieces of chicken meat
  • 2 cucumbers
  • 4 spring shallots
  • 2 teaspoons thinly sliced red spur chilli
  • 8 garlic cloves
  • 1 teaspoon ground pepper
  • 4 tablespoons light soy sauce
  • 2 tablespoons oyster sauce
  • 8 tablespoons Cooking oil
  • Lettuce for garnish
