FRIED RICE WITH RED FERMENTED TOFU

Preparation Time :
30 minutes

Cooking Time :
45 minutes

Preparation Method :

  • Bring a pot of water to the boil over medium heat. Add in tofu and cook until done and floated to the surface.
  • Transfer to soak in water until cold. Remove and pat-dry, cut to obtain small dices.
  • Fry in hot oil over medium heat until just golden. Drain on absorbent and put aside.
  • Fry garlic with olive oil over medium heat until lightly golden.
  • Remove only fried garlic and put aside. In the same pan, add in red fermented tofu and stir-fry until it smells fragrant.
  • Add steamed rice, toss to coat well. Remove the rice to the side of the pan and add the remaining olive oil.
  • Break in an egg, stir and cook until done. Toss the egg with cooked rice.
  • Season to taste with sugar and liquid reserved from red fermented tofu. Toss to mix well.
  • Add fried garlic, toss again and turn off the heat. Transfer fried rice to a mixing bowl and toss with sliced shallot.
  • Spoon fried rice onto a serving dish, garnish with hot chili and coriander.
  • Enjoy with the condiments.

INGREDIENTS

  • 2 piece semi-hard white tofu
  • 300 ml Cooking oil
  • 2 tablespoons Thai garlic, pounded
  • 5 tablespoons Cooking oil
  • 2 tablespoons red fermented tofu, mashed finely
  • 500 grams steamed brown rice
  • 2 eggs
  • 4 teaspoons liquid reserved from red fermented tofu
  • 4 tablespoons sliced shallot 
  • Hot chili and coriander leaves for garnish 
  • Condiments: sliced shallot, shredded green mango, lime wedge and sliced cucumber
