Preparation Method :
- Squeeze the coconut meat to obtain coconut cream and coconut milk.
- Heat the coconut cream in a wok while stirring. When the oil comes to the surface.
- Add the spice mixture, stir-fry until fragrant, and then put in the chicken and continue stir-frying.
- When the chicken is about done, add the coconut milk, and stir to mix everything together.
- Season with the sugar and fish sauce and continue stir-frying until the sauce thickens.
- Add the makheua phuang and he makheua praw eggplant fruits, mix everything together well, and then put in the rice.
- Stir-fry until the rice is nice and dry, put in the sweet basil, mix everything together well, and then turn off the heat.
- Transfer the fried rice to a plate, sprinkle with the spur chilli slices, and serve.

- 750 grams cooked rice
- 200 grams cut bite-sized Chunks of chicken meat
- 200 grams grated coconut meat
- 2 tablespoons kaeng phet spice mixture or red curry paste
- 5 makheua praw eggplant fruits cut into wedge-shaped slices
- 4 tablespoons makheua phuang eggplant fruits
- 100 grams horapha sweet basil leaves
- 4 teaspoons fine sliced red spur chilli
- 2 tablespoons fish sauce
