Preparation Method :
- Place the trout fillets in a medium non-stick frying-pan. Pour the orange juice and rind over the fillets and add the capers.
- Bring the juices to the boil and simmer gently for 5 minutes or until the trout is cooked.
- Add the spinach to the pan, stir into the sauce and allow to wilt. Season well and serve immediately.

- Grated rind and juice of 2 oranges
- 150 grams baby spinach
- 25 grams capers, drained
- Salt and freshly ground black pepper, to taste
