TROUT FILLETS WITH ORANGE, CAPER AND SPINACH SAUCE

Preparation Time :
15 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Place the trout fillets in a medium non-stick frying-pan. Pour the orange juice and rind over the fillets and add the capers.
  • Bring the juices to the boil and simmer gently for 5 minutes or until the trout is cooked.
  • Add the spinach to the pan, stir into the sauce and allow to wilt. Season well and serve immediately.

INGREDIENTS

  • 750 grams trout fillets
  • Grated rind and juice of 2 oranges
  • 150 grams baby spinach
  • 25 grams capers, drained
  • Salt and freshly ground black pepper, to taste
