FISH WITH TAMARIND SAUCE

Preparation Method :
- Mix the pieces of fish with salt and set aside for 10 minutes then fry in hot oil (set to medium heat) until golden yellow. Remove and set aside.
- Mix the palm sugar with the tamarind juice, fish sauce and water and simmer over low heat until thickened.
- Add the fish and mix with the tamarind sauce. Remove and place on a serving dish, then garnish with fried shallots, garlic and chili.

- 300 grams Sea bass fillets, cut into bite-sized pieces
- 50grams Palm sugar
- 5 tablespoon Tamarind juice
- 1 teaspoon Ground salt
- 4 tablespoon Fish sauce
- 50 ml Water
- 50 grams Shallots, fried
- 3 tablespoon Garlic, fried
- 10-15 dried bird chili, fried crispy
- IDHAYAM Mantra Peanut oil for frying
