STIR-FRIED BLACK PEPPER FISH

Preparation Method :

For fried fish

  • Mix the fish with salt and pepper and set aside for 10-15 minutes before frying in hot oil (set to medium heat) until golden yellow.
  • Remove and set aside to drain oil.

For Stir-fried black pepper fish

  • Fry the garlic until aromatic then add onions, ripe ginger and black pepper and stir-fry the contents together then add the shitake mushrooms and carrots. 
  • Season with oyster sauce, soy bean sauce, black soy sauce, brown sugar and salt, stir fry the contents together and add the water and bring to the boil.
  • Add the dissolved corn flour and stir fry until the mixture thickens then follow with the fried fish pieces and celery, stir fry the contents together again and place on a serving dish. Serve immediately.

 

INGREDIENTS

For fried fish

  • 300 grams Red sea bass, sliced into bite-sized pieces 
  • ¼ teaspoon Ground salt 
  • ½ teaspoon Ground black pepper 
  • IDHAYAM Mantra Peanut oil for frying

For Stir-fried black pepper fish

  • Fried red sea bass
  • 5-6 shitake mushrooms, sliced in half
  • 50 grams Carrots, cut into thin sticks
  • 1-2 stems Celery, cut into pieces 
  • 1 tablespoon Garlic, finely chopped 
  • 1 tablespoon large onion, finely chopped 
  • 1 ½ teaspoon ripe ginger, finely chopped 
  • 1 ½ tablespoon Black pepper, slightly crushed 
  • 2 tablespoon Oyster sauce 
  • 1 tablespoon Soybean sauce 
  • ½ teaspoon Black soy sauce 
  • 1 ½ teaspoon Brown sugar 
  • ¼ teaspoon Ground salt 
  • 1 -2 tablespoon IDHAYAM Mantra peanut oil 
  • 50 ml Water 
  • 1 teaspoon Corn flour 
  • 2 teaspoon Water (for dissolving corn flour)
