Preparation Method :
- The Cheese Sauce: Place the flour in a saucepan and gradually stir in the milk. Simmer to low flame and bring to the boil, stirring continuously until the sauce has thickened.
- Adjust seasoning with salt and pepper, then stir in half of the Gruyere cheese.
- Preheat the oven to 180°C / 350°F / Gas Mark 4.
- 04Place the spinach and garlic in a large pan over a medium heat and cook for 3 minutes or until the spinach has wilted and all the moisture has evaporated.
- Place the tomatoes in the bottom of an ovenproof dish, layer over the spinach and then place the cod on top.
- Pour the cheese sauce over it and sprinkle with the other half of the cheese. Cook for 15 minutes or until golden and bubbling.

- 250 grams fresh baby spinach or frozen spinach leaves
- 150 grams ripe tomatoes, sliced
- 250 grams pieces skinless cod fillet
- 1 garlic clove, crushed

- 250 ml skimmed milk
- 50 grams Gruyere cheese, grated
- 30 grams plain flour
- Salt and freshly ground black pepper, to taste
