PAPAYA YELLOW CURRY

Preparation Method :

For curry chili paste

  • Crush all the ingredients together until smooth. This will yield approximately ¼ cup of yellow curry chili paste.


For Papaya yellow curry

  • Bring water to the boil then add the curry chili paste and stir to dissolve.
  • Add the papaya until it softens then add the garcinia. Stir the contents together    
  • Season with tamarind juice, palm sugar and salt. Taste to get the balance a sour, salty and sweet flavor.
  • Add the shrimp and wait until cooked then remove from heat. Serve immediately.



INGREDIENTS

For curry chili paste

  • 4 Yellow cayenne peppers cut into slices
  • 2 tablespoon Garlic, coarsely chopped    
  • 1 tablespoon Shallots, coarsely chopped    
  • 1 teaspoon Lemongrass, slivered    
  • 1 tablespoon Turmeric, coarsely chopped    
  • 2 teaspoon Shrimp paste

For Papaya yellow curry

  • 800 grams Raw papaya, peeled and thinly sliced diagonally
  • 200 grams Medium-sized fresh shrimps, peeled and deveined    
  • 50 grams Yellow curry chili paste    
  • 5 pieces Garcinia
  • 50 ml Tamarind juice
  • 50 grams Palm sugar
  • 1 ½ tablespoon Ground salt
  • 600 ml Water
