GLAZED CARROTS

Serves :
4

Preparation Time :
15 minutes

Cooking Time :
35 minutes

Preparation Method :

  • Cut the carrots into rounds or fingers, or leave them whole if tiny.
  • Place the carrots in a pan with the stock, butter and sugar, cover and simmer gently for 20 minutes.
  • Remove the lid and continue cooking over a high heat until the liquid is thick and syrupy.
  • Stir carefully from time to time to stop the carrots sticking to the pan.
  • When the carrots are bright and glistening and the liquid has almost evaporated, add salt and pepper to taste, pile into a hot serving dish and garnish with mint or parsley.

INGREDIENTS

  • 500 grams carrots
  • 400 ml boiling chicken stock
  • 50 grams butter
  • 3 tablespoons sugar
  • Salt and freshly ground pepper
  • Chopped mint or parsley to garnish
