Preparation Method :
- Cut the tops off the peppers and reserve; discard the seeds and cores.
- Blanch in boiling salted water for 4 minutes, then drain.
- Place the tomatoes in a bowl with the breadcrumbs, apple, cheese, garlic sausage, mustard and salt and pepper to taste.
- Mix well and spoon the mixture into the peppers. Replace the lids and place in a greased small, shallow ovenproof dish.
- Cook in a preheated moderately hot oven (190°C / 375°F, Gas Mark 5) for 20 minutes.
- Serve hot as a starter or with cold meats and salad.

- 4 tomatoes, skinned and chopped
- 100 gram fresh breadcrumbs
- 1 dessert apple, cored and chopped
- 100 gram Edam cheese, finely grated
- 80 gram garlic sausage, finely chopped
- 1 teaspoon French mustard
- Salt and freshly ground pepper
