Preparation Method :
- Put the marrow in a lightly greased baking dish. Set aside.
- Heat the oil in a pan. Add the onion and fry gently for 3 minutes, stirring occasionally.
- Add the mushrooms and fry for a further 3 minutes.
- Remove from the heat, add the remaining ingredients and mix well.
- Spoon the stuffing mixture into the centre of the marrow rings, then cover the dish with foil.
- Bake in a preheated moderate oven for 20 to 30 minutes until the marrow is just tender.
INGREDIENTS
- 2 kilogram marrow, cut crosswise into 2 inch thick rings, seeds removed
- 2 tablespoon Cooking oil
- 2 onion, peeled and chopped
- 200 grams mushrooms, wiped and chopped
- 200 grams cooked lean ham, diced
- 50 grams fresh whole meal breadcrumbs
- 2 tablespoon chopped parsley
- 2 tablespoon chopped marjoram or oregano
- Salt
- Freshly ground black pepper
