FRIED MEXICAN BEANS (FRIJOLES)

Preparation Time :
45 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Place the beans and their liquid in a heavy-based pan with half the onion and the garlic.
  • Bring to the boil and simmer for 10 minutes. Drain and leave to cool.
  • Heat the oil in a heavy frying pan. Gradually add the beans, mashing them as you go with a potato masher.
  • Stir in the chili powder, adding extra if you like it hotter and spicier. Add salt and pepper at the same time if necessary.
  • Continue stirring over a low heat until the mixture is thick, then spoon into a heated serving bowl and sprinkle with remaining onion.

INGREDIENTS

  • 900 gram red kidney beans
  • 2 onion, chopped
  • 2 clove garlic, crushed salt
  • 4 tablespoons Cooking oil
  • 2 teaspoon chili powder
  • Salt and ground pepper
