DEEP-FRIED PARSNIPS

Preparation Time :

Cooking Time :
20 minutes

Preparation Method :

  • Peel the parsnips and cut into short sticks about 1 cm / ½ inch thick.
  • Parboil in salted water to cover for 8 minutes, then drain and dry and leave to cool.
  • Beat the egg with a little salt and freshly ground pepper.
  • Dip the parsnip sticks into the seasoned flour and shake off surplus, then dip into the egg, roll in breadcrumbs and chill for 10 minutes to set the coating.
  • Heat the oil to 180° / 350°F (when a cube of bread browns in 25 to 30 seconds) and fry the parsnip sticks until golden brown.
  • Drain on kitchen paper towels and serve at once.

INGREDIENTS

  • 4 small parsnips 
  • Salt and freshly ground pepper 
  • 2 eggs 
  • 4 tablespoons plain flour, seasoned with salt and pepper
  • Dry breadcrumbs 
  • Cooking oil for deep frying
