DEEP-FRIED PARSNIPS

                    Preparation Method :
- Peel the parsnips and cut into short sticks about 1 cm / ½ inch thick.
 - Parboil in salted water to cover for 8 minutes, then drain and dry and leave to cool.
 - Beat the egg with a little salt and freshly ground pepper.
 - Dip the parsnip sticks into the seasoned flour and shake off surplus, then dip into the egg, roll in breadcrumbs and chill for 10 minutes to set the coating.
 - Heat the oil to 180° / 350°F (when a cube of bread browns in 25 to 30 seconds) and fry the parsnip sticks until golden brown.
 - Drain on kitchen paper towels and serve at once.

- 4 small parsnips
 - Salt and freshly ground pepper
 - 2 eggs
 - 4 tablespoons plain flour, seasoned with salt and pepper
 - Dry breadcrumbs
 - Cooking oil for deep frying
