CHINESE STIR-FRIED VEGETABLES

Preparation Method :

  • Heat the oil in a wok or large frying pan. Add the bacon, onion, garlic, ginger, cauliflower and mushrooms and fry briskly for 3 minutes, stirring constantly.
  • Add the peas and cabbage and fry for a further 2 minutes, stirring constantly.
  • Add the remaining ingredients and stir-fry over moderate heat for about 5 minutes until the vegetables are tender but still crisp, and most of the liquid has evaporated.
  • Taste and adjust the seasoning.

INGREDIENTS

  • 2 tablespoon Cooking oil
  • 100 grams lean bacon, derinded and chopped
  • 2 large onion, peeled and chopped
  • 2 clove garlic, peeled and crushed
  • 2 tablespoon peeled and grated fresh root ginger
  • 100 grams mushrooms, wiped and sliced
  • 250 grams cauliflower, cut into florets
  • 750 grams mange tout, topped and tailed
  • 750 grams Chinese or other cabbage, shredded
  • 200 grams bean-sprouts
  • 100 grams whole peanuts, shelled
  • 2 tablespoon soy sauce
  • 10 tablespoons stock or water
  • Salt
  • Freshly ground black pepper
