Preparation Method :
- Heat the oil in a wok or large frying pan. Add the bacon, onion, garlic, ginger, cauliflower and mushrooms and fry briskly for 3 minutes, stirring constantly.
- Add the peas and cabbage and fry for a further 2 minutes, stirring constantly.
- Add the remaining ingredients and stir-fry over moderate heat for about 5 minutes until the vegetables are tender but still crisp, and most of the liquid has evaporated.
- Taste and adjust the seasoning.
INGREDIENTS
- 2 tablespoon Cooking oil
- 100 grams lean bacon, derinded and chopped
- 2 large onion, peeled and chopped
- 2 clove garlic, peeled and crushed
- 2 tablespoon peeled and grated fresh root ginger
- 100 grams mushrooms, wiped and sliced
- 250 grams cauliflower, cut into florets
- 750 grams mange tout, topped and tailed
- 750 grams Chinese or other cabbage, shredded
- 200 grams bean-sprouts
- 100 grams whole peanuts, shelled
- 2 tablespoon soy sauce
- 10 tablespoons stock or water
- Salt
- Freshly ground black pepper
