ROASTED ASPARAGUS WITH CORIANDER AND LIME

Preparation Method :
- Arrange the asparagus in a single layer in a shallow roasting tin.
- Spoon 4 tablespoons of the olive oil over the asparagus and shake lightly to mix.
- Roast in a preheated oven at 190°C / 375°F / Gas Mark 5 for about 20-22 minutes or until just tender, turn once. Leave to cool.
- Transfer the roasted asparagus spears to a shallow dish and spoon the remaining olive oil and the lime juice over the top.
- Sprinkle with salt and pepper and toss lightly. Garnish with torn coriander leaves and lime wedges.

- 750 grams asparagus spears, trimmed and peel 2 inches off the base of each stalk
- 100 ml Cooking oil
- 50 ml lime juice
- Salt and pepper, to taste
- Coriander leaves and lime wedges, to garnish
