ROASTED ASPARAGUS WITH CORIANDER AND LIME

Preparation Time :
10 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Arrange the asparagus in a single layer in a shallow roasting tin.
  • Spoon 4 tablespoons of the olive oil over the asparagus and shake lightly to mix.
  • Roast in a preheated oven at 190°C / 375°F / Gas Mark 5 for about 20-22 minutes or until just tender, turn once. Leave to cool.
  • Transfer the roasted asparagus spears to a shallow dish and spoon the remaining olive oil and the lime juice over the top.
  • Sprinkle with salt and pepper and toss lightly. Garnish with torn coriander leaves and lime wedges.

INGREDIENTS

  • 750 grams asparagus spears, trimmed and peel 2 inches off the base of each stalk
  • 100 ml Cooking oil
  • 50 ml lime juice
  • Salt and pepper, to taste
  • Coriander leaves and lime wedges, to garnish
