GRILLED AUBERGINE (EGGPLANT)

Preparation Time :
45 minutes

Cooking Time :
10 minutes

Preparation Method :

  • Wash the aubergine (eggplant) and cut off the stalk end. Cut into 2 cm / ¾ inch thick slices, place in a bowl and sprinkle with salt. Leave for 20 minutes.
  • Mix together the garlic, onion and oil or melted butter.
  • Rinse the aubergine (eggplant) slices, then pat dry with kitchen paper towels. Arrange on a greased baking sheet and brush with the oil or butter mixture.
  • Grill (broil) the aubergine (eggplant) under medium heat for 5 minutes, basting once, then turn, brush again and cook for 2 to 3 minutes more.

INGREDIENTS

  • 2 small firm aubergines 
  • Salt
  • 2clove garlic, crushed 
  • 2 small onion, finely chopped or grated
  • 6 tablespoons Cooking oil
