POTATOES WITH MILK

Preparation Method :
- Place potatoes in large pan, cover with milk, slowly simmer, uncovered, skimming top when necessary, until potatoes are tender; drain, discard milk.
- Layer potatoes in ovenproof dish (1.75 litre/7cup capacity), sprinkle with topping.
- Cook, uncovered in hot oven 15 minutes or until potatoes are heated through.
Topping:
- Add bacon to dry pan, cook, stirring, until crisp; cool. Combine bacon, basil, cheese, thyme and garlic in bowl; mix well.
INGREDIENTS
- 1 kg new potatoes, peeled, sliced
- 1 litre milk
Topping
- 3 bacon rashers, chopped
- 2 tablespoons chopped fresh basil
- 20 grams grated parmesan cheese
- 2 teaspoons chopped fresh thyme
- 1 clove garlic, crushed
