POTATO RATATOUILLE

Preparation Time :
15 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Heat oil in pan, add onion, garlic and potatoes, cook, stirring, 5 minutes or until potatoes are lightly browned.
  • Add un-drained crushed tomatoes, sugar, paste, peppers and herbs, cook, covered, 15 minutes.
  • Add zucchini, cook, covered, 10 minutes or until all vegetables are tender.

INGREDIENTS

  • 1 tablespoon sesame oil
  • 150 grams onion, chopped
  • 2 cloves garlic, crushed
  • 500 grams new baby potatoes, halved
  • 500 grams can tomatoes
  • 1 teaspoon sugar
  • 1 tablespoon tomato paste
  • 150 grams red pepper, chopped
  • 150 grams green pepper, chopped
  • 2 teaspoons chopped fresh thyme
  • 2 teaspoons chopped fresh oregano
  • 250 grams zucchini, sliced
