POTATO AND AVOCADO PUREE

Preparation Time :
30 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Put the potatoes into a pan with the mint and blade of mace; add cold water to cover and bring to the boil.
  • Lower the heat and simmer gently until the potatoes are just tender.
  • Drain thoroughly, discarding the mint and mace.
  • Put the cooked potatoes into a blender or food processor.
  • Add the avocado flesh, lemon rind and salt and pepper to taste; blend until smooth.
  • Heat the puree through gently in either a heavy- bottomed pan or a double boiler.
  • Serve hot.

INGREDIENTS

  • 750 grams potatoes, peeled and cut in chunks
  • Mint sprig
  • Piece of blade mace
  • 2 ripe avocado, halved, stoned and peeled
  • Finely grated rind of 1 lemon
  • Salt
  • Freshly ground black pepper
