Preparation Method :
- Put the potatoes into a pan with the mint and blade of mace; add cold water to cover and bring to the boil.
- Lower the heat and simmer gently until the potatoes are just tender.
- Drain thoroughly, discarding the mint and mace.
- Put the cooked potatoes into a blender or food processor.
- Add the avocado flesh, lemon rind and salt and pepper to taste; blend until smooth.
- Heat the puree through gently in either a heavy- bottomed pan or a double boiler.
- Serve hot.

- 750 grams potatoes, peeled and cut in chunks
- Mint sprig
- Piece of blade mace
- 2 ripe avocado, halved, stoned and peeled
- Finely grated rind of 1 lemon
- Salt
- Freshly ground black pepper
