PARSNIP AND POTATO PUREE

Preparation Time :
20 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Boil, steam or microwave parsnips and potatoes separately until tender.
  • Process parsnips until smooth.
  • Mash potatoes with cream and butter until almost smooth.
  • Add to parsnip puree in processor, process until just combined. Stir in thyme.

 

INGREDIENTS

  • 250 grams parsnips, peeled, chopped
  • 500 grams potatoes, peeled, chopped
  • 2 tablespoons cream
  • 25 grams butter
  • 2 teaspoons chopped fresh thyme
