Preparation Method :
- Wash the potatoes, place them in a roasting bag and add the mint and chives or spring onions (scallions).
- Dot the butter over the potatoes and sprinkle with salt. Close the bag with its twist tie and make 3 or 4 holes in the top as directed.
- Place in a baking dish and cook in a preheated moderately hot oven (190°C/375°F, Gas Mark 5) for 30 to 40 minutes, or until tender.
