Preparation Method :
- Peel the potatoes and cook until tender. Drain, and shake the pan over the heat for a moment to dry the potatoes.
- Mash well, and while still hot, beat in the butter. Season with salt and pepper to taste and work in enough flour to bind to dough.
- Divide the dough in half. Pat or roll each half out into a round, 1 cm / ½ inch thick, on a floured board, then cut each circle into quarters.
- Make sure the griddle or frying pan (skillet) is well greased and heated through. Cook the potato cakes for about 5 minutes each side until nicely brown.
- Split each potato cake in two, and fill with a slice of butter.
- Serve very hot with sausages, bacon and tomatoes, or fried eggs, or with golden or maple syrup.
- Serve hot.
