Preparation Method :
- Wash the potatoes and boil them in their skins until tender. When cooked, peel the potatoes and cut them into small dice.
- Place the potatoes in a bowl and add the onion, parsley, salt and pepper to taste and lemon juice.
- Heat the oil or bacon dripping in a large heavy frying pan (skillet) and press the potato mixture into the pan, shaping it into a broad flat cake.
- Cook very gently over a low heat, shaking the pan from time to time to prevent sticking. When the bottom is brown, cut the potato cake in half and turn each half with two spatulas to avoid breaking.
- Pour the cream over the potatoes and continue cooking until the underside is brown. Cut into four pieces, slide on to a heated serving dish.
- Serve at once.

- 6 tablespoons Cooking oil
- 4 tablespoons single cream
