FRIED POTATOES AND CARROTS CURRY

Preparation Method :
- Boil, steam or microwave potatoes and carrots separately until just tender; drain.
 - Heat butter in pan, add garlic, potatoes and carrots, cook, stirring, until potatoes are browned, remove from pan.
 - Heat oil in pan, add curry paste, cook, stirring, until fragrant.
 - Add tomatoes, cook, stirring, about 3 minutes or until mixture is slightly thickened.
 - Remove from heat, stir in potatoes, carrots, yogurt and coriander.
 
INGREDIENTS
- 1 kg potatoes, peeled, chopped
 - 350 grams carrots, peeled, chopped
 - 50 grams butter
 - 2 cloves garlic, crushed
 - 1 tablespoon Peanut oil
 - 1 tablespoon bottled red curry paste
 - 250 grams tomatoes, peeled, seeded, chopped
 - 150 ml plain yogurt
 - 2 tablespoons chopped fresh coriander
