FRIED POTATOES AND CARROTS CURRY

Cooking Time :
45 minutes

Preparation Method :

  • Boil, steam or microwave potatoes and carrots separately until just tender; drain.
  • Heat butter in pan, add garlic, potatoes and carrots, cook, stirring, until potatoes are browned, remove from pan.
  • Heat oil in pan, add curry paste, cook, stirring, until fragrant.
  • Add tomatoes, cook, stirring, about 3 minutes or until mixture is slightly thickened.
  • Remove from heat, stir in potatoes, carrots, yogurt and coriander.

 

INGREDIENTS

  • 1 kg potatoes, peeled, chopped
  • 350 grams carrots, peeled, chopped
  • 50 grams butter
  • 2 cloves garlic, crushed
  • 1 tablespoon Peanut oil
  • 1 tablespoon bottled red curry paste
  • 250 grams tomatoes, peeled, seeded, chopped
  • 150 ml plain yogurt
  • 2 tablespoons chopped fresh coriander
