Preparation Method :
- Steam the potatoes in a pressure cooker, if possible, or cook in a small amount of water until tender, to avoid them becoming too moist.
- Mash or puree, then beat in one third of the butter, the milk a little at a time, and the salt, pepper and nutmeg to taste.
- Melt half the remaining butter in heavy-based frying pan (skillet), add the onion and cook gently until tender and lightly colored.
- Add onion to potato puree and cook gently over low heat, turning mixture constantly. Spread mixture in greased gratin dish, dot with remaining butter and brown under a preheated hot grill (broiler).
- Serve immediately.

- 150 gram butter about
- 200 ml hot milk

- Freshly grated nutmeg
- 2 large onion, peeled and sliced into very thin rings
