FRENCH-STYLE CREAMED POTATOES

Preparation Method :

  • Steam the potatoes in a pressure cooker, if possible, or cook in a small amount of water until tender, to avoid them becoming too moist.
  • Mash or puree, then beat in one third of the butter, the milk a little at a time, and the salt, pepper and nutmeg to taste.
  • Melt half the remaining butter in heavy-based frying pan (skillet), add the onion and cook gently until tender and lightly colored.
  • Add onion to potato puree and cook gently over low heat, turning mixture constantly. Spread mixture in greased gratin dish, dot with remaining butter and brown under a preheated hot grill (broiler).
  • Serve immediately.

INGREDIENTS

  • 1 kg floury potatoes, peeled 
  • 150 gram butter about 
  • 200 ml hot milk 
  • Salt
  • Freshly ground pepper 
  • Freshly grated nutmeg
  • 2 large onion, peeled and sliced into very thin rings
