Preparation Method :
- Scrub the potatoes well and place them in a pan with enough cold water to cover. Add salt to taste.
- Bring to the boil and cook with a lid on the pan for about 20 to 25 minutes until the potatoes are easily pierced with a fork. Drain thoroughly.
- Hold the potatoes on a fork and strip off the skins with a sharp knife. Return to the pan over a very low heat and mash with a potato masher, or put through a potato ricer.
- Add the butter and beat the potatoes with a wooden spoon until smooth.
- Add the milk, pouring in a little at a time and beating until light and fluffy. Remove from the heat, add salt and pepper to taste.
- Serve at once in a heated dish.

- 250 ml milk
