Preparation Method :
- Wash the potatoes and boil them with the skins until just tender. Peel the potatoes and cut into fairly thick slices.
- Melt the butter in a flameproof dish and add the potatoes in layers, seasoning each layer with chopped spring onion (scallion), parsley and salt and pepper to taste.
- Heat the cream in a pan to boiling point and pour over the potatoes.
- Cook the dish in a preheated cool oven (150°C/300°F, Gas Mark 2) for about 20 minutes until the potatoes are heated through.
- Serve Hot.

- 1 kg potatoes
- 50 gram butter
- 4 spring onions, finely chopped
- 2 tablespoon finely chopped parsley
- Salt and freshly ground pepper
- 8 tablespoons single cream
