CREAM POTATO

Preparation Method :

  • Wash the potatoes and boil them with the skins until just tender. Peel the potatoes and cut into fairly thick slices.
  • Melt the butter in a flameproof dish and add the potatoes in layers, seasoning each layer with chopped spring onion (scallion), parsley and salt and pepper to taste.
  • Heat the cream in a pan to boiling point and pour over the potatoes.
  • Cook the dish in a preheated cool oven (150°C/300°F, Gas Mark 2) for about 20 minutes until the potatoes are heated through.
  • Serve Hot.

INGREDIENTS

  • 1 kg potatoes 
  • 50 gram butter 
  • 4 spring onions, finely chopped 
  • 2 tablespoon finely chopped parsley
  • Salt and freshly ground pepper 
  • 8 tablespoons single cream
