PEA, AVOCADO AND MINT PUREE

Cooking Time :
30 minutes

Preparation Method :

  • Place the peas in boiling salted water with the mint and cook for 5 to 10 minutes or until tender.
  • Place in a blender or food processor with the avocado, garlic, lemon juice and milk; alternatively, place the ingredients in the pan and use a multi-blender.
  • Work until smooth, adding salt and pepper to taste.
  • Transfer the puree to a warmed dish.

INGREDIENTS

  • 750 grams shelled fresh peas or minted, frozen peas
  • Few mint sprigs
  • 2 ripe avocado, peeled and stoned
  • 2 clove garlic, peeled and crushed
  • 4 teaspoons lemon juice
  • 6 tablespoons skimmed milk
  • Salt
  • Freshly ground black pepper
  • Mint sprig, to garnish
