Preparation Method :
- Place the peas in boiling salted water with the mint and cook for 5 to 10 minutes or until tender.
- Place in a blender or food processor with the avocado, garlic, lemon juice and milk; alternatively, place the ingredients in the pan and use a multi-blender.
- Work until smooth, adding salt and pepper to taste.
- Transfer the puree to a warmed dish.
INGREDIENTS
- 750 grams shelled fresh peas or minted, frozen peas
- Few mint sprigs
- 2 ripe avocado, peeled and stoned
- 2 clove garlic, peeled and crushed
- 4 teaspoons lemon juice
- 6 tablespoons skimmed milk
- Salt
- Freshly ground black pepper
- Mint sprig, to garnish
