Preparation Method :
- Pour half inch of water in a pan with a little salt and pepper, the sprig of mint and sugar. Bring the water to the boil, add the peas and cover tightly.
- Cook over a medium heat for 6 to 8 minutes, or until the peas are tender.
- Remove the mint sprig and strain off any liquid. Stir in the butter and a little extra chopped mint and serve.
- To cook 225 g (8 oz) frozen peas: place in pan and add ½ teaspoon sugar and 2 to 3 mint leaves. Add enough boiling water to cover, bring to the boil and-cook for 2 minutes. Drain and serve.
