MINTED PEAS

Preparation Method :

  • Pour half inch of water in a pan with a little salt and pepper, the sprig of mint and sugar. Bring the water to the boil, add the peas and cover tightly.
  • Cook over a medium heat for 6 to 8 minutes, or until the peas are tender.
  • Remove the mint sprig and strain off any liquid. Stir in the butter and a little extra chopped mint and serve.
  • To cook 225 g (8 oz) frozen peas: place in pan and add ½ teaspoon sugar and 2 to 3 mint leaves. Add enough boiling water to cover, bring to the boil and-cook for 2 minutes. Drain and serve.

  • 2 large sprig mint pinch of sugar
  • 1 kg fresh peas, shelled 
  • Knob of butter
  • Little chopped mint to garnish
